Bubble & Squeak
A traditional light meal from the South East of England
– Serves 2.
25 gm butter
1 medium Onion – finely chopped
450 gm Potatoes – cooked and mashed
225 gm Cabbage – cooked and finely chopped
4 – 8 slices Beef – cooked and chopped
salt & pepper
1. Melt butter in a large frying pan.
Add the onion and cook for 4 – 5 minutes, stirring frequently
until softened.
2. Add all the ingedients, season to taste.
3. Fry over a medium heat for about 15 minutes stirring
frequently until browned.
Serve hot
